Putting this together is obviously pretty simple, and the main character is the biscuit. These cheesy biscuits have a great flavor, and when spread with a little butter, a slice of ripe tomato, some thin hot house cucumber slices, and a little crumbled Stilton cheese, they are yummy.
I followed a biscuit recipe found on Epicurious. I added a bit more cheddar and stilton than called for in the recipe.
Ingredients
2 1/2 cups unbleached all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
3/4 teaspoon cream of tartar
1/2 teaspoon salt
7 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
1 1/4 cups (packed) coarsely grated sharp cheddar cheese, chilled
3/4 cup coarsely crumbled Stilton cheese (about 2 ounces), chilled
1 1/4 cups chilled buttermilk
1 large egg
Directions
You need two large cookie sheets to get the 12 biscuits (6 per sheet). So, make room in your oven by placing one rack in the bottom third of your oven, and one rack in the top third of your oven.
Preheat the oven to 400°F. Put parchment down on the cookie sheets, then butter (I used spray-on Pam) and lightly flour the parchment on both sheets. Set sheets aside.
Whisk the first five ingredients in a large bowl to blend well.
Add butter and rub in with fingertips until the mixture resembles a coarse meal.
Add both cheeses; rub in with your fingertips until the cheeses are reduced to small pieces.
Blend buttermilk and egg in a small bowl. Add to flour mixture, stirring just until dough is evenly moistened.
Using 1/3 cup dough for each biscuit, drop 6 mounds onto each prepared sheet, spacing 2 to 3 inches apart.
Bake biscuits for 10 minutes. Reverse positions of sheets. Bake biscuits until golden brown and the tester inserted into the center comes out clean, about 10 minutes longer. Place biscuits in a basket; serve warm.

Tomato, Cucumber, and Stilton cheese on Cheddar & Stilton biscuits
Ingredients
2 ripe tomato slices (heirloom tomato is nice for this)
6 thin hot house cucumber slices (skin on)
Handful of Stilton cheese
1 tablespoon of unsalted butter
2 cheddar & stilton cheese biscuits
Directions
Slice both biscuits in half
Evenly distribute butter on each half of the biscuits
Place one slice of tomato and 3 slices of cucumber on each biscuit's bottom
Add crumble of stilton on top of cucumber
Place biscuit top on top of tomato, cucumber, and cheese
Eat!
Experiment with these biscuits - they would make a great breakfast sandwich! Maybe something like this!
