My mom, your grandmother, included a chili recipe from her friend Chris. She worked with my mom, your grandmother, and was super smart and I remember that she LOVED Willie Nelson. And she had a great chili recipe. I combined hers with a recipe from spendwithpennies.com. I made it up last week and ate it...ALL last week. And I could have it for another week. It is really that good. So here you go - try it!
Ingredients:
• 2 pounds ground beef ( I used a blend of 80/20 and 70/30 lean - I have no idea if that really matters)
• 1 medium yellow onion - diced
• 1 green bell pepper seeded and diced
• 2 jalapeno peppers seeded and diced
• 4 cloves garlic minced
• 14 1/2 oz of diced tomatoes
• 14 1/2 oz crushed tomatoes
• 16 oz of canned kidney beans
• 16 oz of canned chili beans
• 2 cups of beef broth
• 1 cup beer
• 1 1/2 tablespoons of chili powder
• 1 tablespoon of ancho chili powder
• 1 tablespoon of tomato paste
• 1 tablespoon brown sugar
• 1 teaspoon cumin
• 1/4 teaspoon of cayenne pepper
• salt and pepper to taste
Directions:
• in a large ditch oven over a medium heat - Combine ground beef and chili powders. Mix well so the chili powders are all incorporated in the beef.
• Add onion, jalapeno, and garlic. Drain any fat.
• Add in remaining ingredients and bring to a boil.
• Reduce heat and simmer uncovered until chili has reached desired thickness. Plan on at least an hour.
• Top with cheddar cheese, green onions, cilantro, or other favorite toppings.
