Quick 30-minute weeknight meal
This one is super simple and quick to make. Great when you are starving and you want to make something quicker than delivery will take to get to your home.
Ingredients:
About 2 pints of cherry tomatoes, halved. TBH, I mixed cherry tomatoes with heirlooms and it was just fine
• 4 garlic cloves, minced
• 2 tablespoons of good olive oil
• 1 teaspoon salt
• 1 teaspoon fresh cracked pepper
• 1 bag of refrigerated tortellini (any filling you would like to have). This is usually about 16 oz of tortellini
• fresh grated parmesan cheese
• 8-10 basil leaves hand shredded
Directions:
• Preheat oven to 375 F
• In a medium bowl toss tomatoes, garlic, olive oil, salt and pepper.
• Transfer tomatoes to lined baking sheet and spread in an even layer
• Bake for about 20 minutes until tomatoes are soft.
• Remove tomatoes from the oven
• Meanwhile, cook tortellini per package directions.
• Drain the tortellini
• Plate tortellini and toss in the tomatoes
• Garnish with parmesan cheese and basil
• Serve!!!
