(close copy of Jimmy Dean Hot Sausage)
This stuff is great in buttermilk biscuits and sausage gravy - Yum!
Hot Breakfast sausage
Ingredients:
16 ounces ground pork
1/2 teaspoon salt
1/2 teaspoon cayenne pepper (or more, depending on how hot you want it!)
1/2 teaspoon sage
1/2 teaspoon fresh coarse ground black pepper
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon coriander
1/2 teaspoon fennel seeds
1/2 teaspoon smoked paprika
1/4 teaspoon msg (really helps with the flavor on this)
Directions:
Mix all the ingredients until spices are well distributed.
Seal in plastic wrap and place in the refrigerator.
Test a sample prior to using. I find the sausage needs two days in the fridge for the spices to be absorbed and distributed, but feel free to test after 1 day in the fridge.
Can then be stored in the freezer and used another day.
