This is one of my Mom's recipes. I remember Dad loved this stuff. So I thought I would try it out. It's really good! So check it out!
Ingredients:
2 cans minced clams
1/2 onion rough chopped
1 stick of butter
1 tbsp tabasco or preferred hot sauce
1 pinch of white, black and red pepper
1 slice American cheese (totally optional - I did not add this and the recipe was great)
2 tsp lemon juice
1/2 green pepper rough chopped
1 tsp oregano
3/4 cup seasoned bread crumbs
1 tsp parsley flakes
2 tbsp parmesan cheese
1 tsp smoked paprika
Directions:
Put 2 cans of minced clams and 2 tsp lemon juice in a medium saucepan and simmer over medium-high heat
Blend onion, green pepper and parsley flakes with a blender or immersion blender. Add some clam juice to help puree the mixture if needed.
Add puree to clam mixture on the stove.
Add 1 butter, oregano, tabasco sauce, white, black, red pepper to the clam mixture
Add bread crumbs and remove from heat. The mix should look like oatmeal
Pour contents into ramekins.
You can freeze the mixture at this point, or continue with the recipe
When ready to serve, sprinkle with parmesan cheese. Add American cheese if you are using it. Sprinkle with paprika
Preheat oven to 350F
When oven is at temperature , bake ramekin(s) for 10-15 minutes until mixture bubbles and cheese melts
Remove from oven, let cool slightly and serve!
