Corn Salsa
Eumy was playing around with making corn salsa and this version comes out great! Easy to pretty quick to make!
Ingredients:
One 14.75 oz can of Mexican style street corn
One 4 oz can of Hatch diced green chiles (hot)
2 cloves garlic, finely diced
1 small shallot, finely diced
1 medium tomato (heirloom is nice) diced
1 handful cilantro chopped
Juice from 1/2 lemon
2-3 tablespoons of pineapple vinegar
Salt to taste
Directions:
Combine all ingredients in a bowl and mix well.
Test the salsa and adjust it to your desired taste.
Place in an airtight container and place in the refrigerator. It tastes better after the flavors are set together overnight.
