Sausage Grinder
This one reminds me of these grinders, or sausage sub sandwiches, we used to get as kids back east in Connecticut. Easy to make and you can use any sauce you would like; marinara, spaghetti or better yet, use the 10 minute tomato sauce I posted. Its perfect for this sandwich.
Ingredients:
2-4 large spoons of Tomato sauce
1 Hot Italian sausage; store-bought is just fine
1 sausage roll or hoagie roll; again, store-bought works fine!
1 handful of low-moisture shredded mozzarella cheese
1-2 tablespoons of parmesan cheese
2 tablespoons of extra virgin olive oil
Directions:
Set oven to broil.
Place a frying pan on the stove over medium heat.
Add one tablespoon of olive oil to the pan.
When oil is shimmering, add sausage. Cover pan and cook sausage on one side for about 5 minutes
Lift the cover and turn the sausage. Cover the pan again and cook the sausage for another 5 minutes or until the sausage's internal temperature reaches 165 degrees F. Remove sausage from the heat and set aside.
Line a baking sheet with aluminum foil
Place an open sausage roll on the baking sheet and spread the remaining olive oil on the inside of the roll.
Sprinkle a little mozzarella cheese on the roll and place the roll and baking sheet in the oven for about 1 minute until the cheese melts but the roll is not overly brown.
Pull the roll from the oven.
Cut sausage into four long strips (basically quarter the sausage)
Spread some tomato sauce on the open roll
Add some mozzarella cheese on top of the sauce
Add sausage strips and top the sausage with more tomato sauce, mozzarella cheese, and parmesan cheese
Place the roll back under the broiler for 1-2 minutes until the cheese melts and the roll gets nicely browned.
Remove from broiler, plate it, and eat it!!
